Winter Squash: Red Kuri

Red Kuri squash, similar to kabochas, have a sweet chestnut flavor and flaky, drier texture.  Typically I slice them in half lengthwise, scoop out the seeds, and roast them face down in a pan with a bit of water.  These are particularly good for stuffed squash, or you can use them for pies, soups, curries, and more. Store at room temperature or use as a decoration until you’re ready to eat them.
