Butternut squash are sweet and nutty with a buttery texture.  Typically I slice them in half lengthwise, scoop out the seeds, and roast them face down in a pan with a bit of water.  Or I peel them, slice them into cubes, toss with oil, and roast them on a sheet pan. Store at room temperature or use as a decoration until you’re ready to eat them.
