Japanese eggplant are one of farmer Carolina’s very favorite vegetables. These eggplant are flavorful and succulent and not bitter. Carolina’s favorite way to cook them is to slice them into slabs (skin on), toss with olive oil and salt, and grill or roast them until they are soft and caramelized. Price is for one large or 2 medium sized eggplant, about 3/4 pound.
